Etymology

1. Apparently from Old English eolh, from Proto-West Germanic *elh, from Proto-Germanic *elhaz, though it is not found before 1475.
2. For the phonetic development, compare Middle English dwerk (“dwarf”) and dialectal English felk (“felloe”) and fleck (“flea”); according to Hamp, such forms were generalised from genitives in -es, where syncope occured followed by a development from /xs/ to /ks/. See: Old English Nouns 'eolh'.
